Terijaki beef on halloumi and mango salad

Ingredients
- 1 tbsp. mustard
- 1 tbsp. honey
- 3 tbsp. yogurt
- 15 black seedless grapes, halved
- 2 tbsp. toasted pumpkin seeds
- 1 cup mango cubes ( can be frozen)
- 2 tbsp. chopped mint leaves
- 150g halloumi cheese
- Bunch baby spinach,
- 300g ribeye of beef steak
- 2 tbsp. teriyaki sauce
- 1 tsp ginger mince
Method
In a medium sized bowl mix together the mustard, honey and yoghurt. Add in the grapes, seeds, mango and mint and mix together well. Slice the halloumi cheese and quickly grill on a griddle pan with a little oil till golden brown. Mix the grilled halloumi and baby spinach leaves into the mango salad and season well with salt and pepper. Next, quickly brush the beef with the teriyaki and ginger paste and grill until medium done. Allow to rest for a few minutes then slice and serve on top of the halloumi and mango salad.

- 150g ġobon halloumi
- 15-il għenba sewda mingħajr żerriegħa
- kikkra kubi tal-mang (tal-friża)
- mazz spinaċi

Qatta’ l-ġobon halloumi u aqli fuq taġen gradilja bi ftit żejt sakemm jieħu kulur kannella dehbi. Ħallat il-halloumi ggriljat u l-weraq tal-ispinaċi fl-insalata tal-mang u ħawwar sewwa bil-melħ u l-bżar. Sussegwentement, idlek il-laħam taċ-ċanga biz-zalza terijaki u l-pejst tal-ġinġer u ggrilja sakemm isir. Ħallih joqgħod għal ftit minuti, imbagħad, qatta’ u servi fil-wiċċ tal-insalata tal-halloumi u l-mang.
