Grilled aubergine and guacamole on naan bread

Ingredients
- 1 medium sized aubergine
- 1 avocado ready to eat
- 1 lime, zest and juice
- ½ red chill, chopped
- 1 ripe tomato, deseeded and diced
- 1 shallot
- 2 tbsp. chopped coriander
- 6 mini plain and garlic naan bread (Leicester)
- 2 knobs garlic butter
- 1 mozzarella bufala
Method
Slice the aubergine to 1cm thick, season with salt and pepper and grill on a hot oiled griddle pan till cooked. Meanwhile, make a guacamole by mashing the avocado with a fork and mix in the lime juice and zest, chili, tomato, shallot and coriander. Season with salt and pepper. Spread the naan with garlic butter and grill until soft and golden brown. Decorate the naan bread with grilled aubergine, a wedge of mozzarella and a spoon of guacamole.

Idlek in-naan bil-butir tat-tewm u ggrilja sakemm ikun artab u jieħu kulur kannella dehbi. Żejjen il-ħobż naan bil-brunġiel iggriljat, biċċiet tal-mozzarella u kuċċarina guacamole.
