BBQ Pork spare ribs, watermelon and feta cheese salad

Ingredients

  • 1 pork rack ribs
  • 1 spoon brown sugar
  • Juice of 1 orange
  • 2 spoons BBQ Sauce (Thomy)
  • 1 spoon dark soy sauce
  • 2 star anise
  • 2 spoons smoked paprika
  • 1 spoon ground cumin
  • Chilli sauce to taste
  • 1 watermelon wedge
  • 1 cucumber
  • Fresh mint leaves
  • 2 limes
  • 200g feta cheese
  • Freshly ground black pepper to taste
  • Extra virgin olive oil

Method

Line a baking tray with a couple of layers of aluminium foil.

Cut the ribs into your desired in between the bones and marinade with the smoked paprika, cumin, chilli sauce, bbq sauce, soy sauce, star anise, brown sugar and orange juice. Transfer to the prepared dish , cover and cook in a preheated oven at 150֯c for 1 ½ hours. Remove from oven, uncover, baste with the obtained juices, add more BBQ sauce if dry, Finish cooking to glaze on a BBQ in an oven at a temperature of 200֯ c. 

Meanwhile prepare the watermelon salad, peel and cut the watermelon into chunky cubes. Cut the cucumber into smaller dice and mix with the watermelon. Season with freshly ground pepper, mint leaves, lime juice and olive oil. Crush over the feta cheese, blend and chill.
