Aromatic spiced meatballs

Ingredients

  • 1 small onion, peeled and finely diced
  • ½ red bell pepper finely diced
  • 3 garlic cloves finely chopped 
  • 500g mixed pork and beef mince
  • 3 spoons panko breadcrumbs
  • 2 eggs
  • 100mls milk
  • 100mls pineapple juice
  • Fresh coriander
  • Juice of 1 lime
  • 1 spoon Worcestershire sauce
  • 3 teaspoons spice mix (Colman’s)
  • 1 cup BBQ Sauce (Santa Maria)
  • 1 small can pineapple cubes
  • 2 spoons Jamaican jerk spice mix
  • Juice of 1 lime

Method

Cook the onion and bell pepper in a few spoons of olive oil until soft. Remove from heat and allow cooling. Mix together with the minced meat, panko, eggs, pineapple juice, chopped coriander, lime juice, Worcestershire sauce and Jamaican Jerk spice. Mix well and mould into walnut sized meatballs. Lay on a baking tray and bake for 10 minutes in a fairly hot oven. 

Prepare the sauce; Whizz the pineapple juice and pulp into a pulp, pour into a sauce pan. Whisk in the spice mix, lime juice and BBQ sauce. Bring to the boil, set to simmer until sauce thickens slightly.
