Beef with broccoli stir fry with oyster sauce and cashew nuts

Ingredients

  • 350g thin slices beef rump steak
  • 1 tbsp. soy sauce
  • 1 tsp sesame oil
  • 1 tbsp. corn flour

You will also need

  • 1 tbsp. oil
  • 1 onion, sliced
  • 3 cloves garlic, sliced
  • Few slices fresh ginger
  • 3-4 tbsp. oyster sauce
  • 1 tbsp. soy sauce
  • 2 tbsp. toasted cashew nuts
  • 1 tsp corn flour
  • 200g broccoli florets

Method

Cut the beef rump into squares or strips and marinate with the soy, sesame oil and corn flour. Heat a wok with ½ oil and quickly flash fry the beef for 1 minute then remove from the pan. Add in the remaining oil and fry the onion, garlic and ginger for 2 minutes before adding in the broccoli. Cook for 2 minutes then add the beef back to the pan along with the oyster and soy sauce and cook together for 1 minute. Mix the corn flour with a little water and add to the pan along with the cashew nuts and bubble together for 1 more minute to thicken the juices. Serve immediately.

  • mgħarfa zalza tas-sojja
  • kuċċarina żejt tal-ġulġlien
  • mgħarfa dqiq tal-qamħirrun

Ikollok bżonn ukoll

  • mgħarfa żejt
  • basla
  • 3 sinniet tewm
  • ftit flieli tal-ġinġer frisk
  • 3-4 imgħaref oyster sauce
  • mgħarfa zalza tas-sojja
  • 2 imgħaref cashew nuts
  • kuċċarina dqiq tal-qamħirrun
  • 200g brokkli

Method

Aqta’ ċ-ċanga fi kwadri jew strixxi u mmarina bis-sojja, iż-żejt tal-ġulġlien u d-dqiq tal-qamħirrun. Saħħan wok b’nofs mgħarfa żejt u malajr aqli l-laħam taċ-ċanga għal minuta u mbagħad neħħi mit-taġen. Żid iż-żejt li jifdal u aqli l-basla, it-tewm u l-ġinġer għal 2 minuti qabel ma żżid il-brokkli. Sajjar għal 2 minuti, imbagħad, żid iċ-ċanga lura mat-taġen flimkien mal-oyster sauce u z-zalza tas-sojja u sajjar flimkien għal minuta. Ħallat id-dqiq tal-qamħirrum bi ftit ilma u żid mat-taġen flimkien mal-cashews  u sajjar flimkien għal minuta oħra biex tħaxxen il-meraq. Servi immedjatament.
