Ingredients

  • 200g sponge cake, sliced
  • 1 x 200g can pineapple cubes, juice drained and reserved
  • 2 tbsp. strawberry jam
  • 1 tub vanilla ice cream (Alpro)
  • 1 tub chocolate ice cream (Alpro)
  • 2 tbsp. chocolate chips
  • 2 tbsp. chopped hazelnuts
  • 2 egg whites
  • 100g caster sugar
  • Juice 1/2 lemon
  • 2 shots liqueur of your choice

Method

Line the inside of a large bowl or individual portion bowls with cling film. Line the bowls with a layer of sliced sponge all around, then brush with the reserved pineapple juice using a pastry brush. Carefully brush all over with the jam. Fill with alternating layers of the 2 different ice-creams, chocolate chips, nuts pineapple cubes. Finally cover with a layer of sponge and freeze for 4 hours or overnight. When ready, make a meringue by whisking the egg whites to stiff peaks. Continue stirring whilst adding in the sugar and lemon juice until you have a stiff meringue. Turn out the frozen cake, remove the cling film and place onto a lined baking tray. Quickly spread over the meringue and brown with a blow torch or alternatively in the oven at 220°C for a few minutes. Serve immediately.

Iksi skutella kbira jew skutelli żgħar ta’ kull porzjon individwali bi cling film. Iksi l-iskutelli b’saff ta’ sponge mqattgħa mad-dawra kollha, imbagħad xarrab bil-meraq tal-ananas riżervat billi tuża pinzell tal-għaġina. Idlek kollox sewwa bil-ġamm. Imla b’saffi alternanti taż-żewġ ġelati differenti, il-biċċiet taċ-ċikkulata, il-biċċiet tal-ananas u l-ġellewż. Fl-aħħar għatti b’saff ta’ sponge u ffriża għal 4 sigħat jew għal matul il-lejl. Meta tkun lest, agħmel meringue billi tħawwad l-abjad tal-bajd. Kompli ħawwad waqt li żżid iz-zokkor u l-meraq tal-lumi sakemm ikollok meringue iebsa. Aqleb il-kejk iffriżat, neħħi l-cling film u poġġi fuq trej tal-ħami infurrat. Ifrex il-meringue fil-wiċċ malajr u għati kulur kannella bi blow torch jew inkella fil-forn f’temperatura ta’ 220°C għal ftit minuti. Servi immedjatament.
