3 seed quinoa and salmon fish cakes

Ingredients
- 2 salmon fillets, skin removed
- 1 tbsp. soy sauce
- 3 tbsp. sweet chili sauce
- 1 tsp both minced ginger and garlic paste
- 2 tbsp. chopped fresh coriander
- 2 spring onion, finely chopped
- 75g cooked mixed quinoa seeds (Lamb brand)
- Salt and pepper to season
- 1-2 eggs beaten
- 100-150g Japanese panko breadcrumbs
- 2 tbsp. sesame seeds (do we have lamb brand?)
- Oil for frying
- You will also need some fresh salad leaves for serving
Method
Start this recipe by poaching the salmon fillets in a pan of boiling water for just a few minutes. Remove and place into a food processor with the soy, sweet chili, ginger and garlic paste, spring onion and salt and pepper to taste. Blitz together leaving chunky, then add in the cooked quinoa seeds and enough of the beaten egg to hold together. Form onto patties. Mix together the breadcrumbs and sesame seeds and use to coat the patties. Fry in a pan with a little oil on both sides to brown and serve either hot or cold with a side salad and extra sweet chili sauce
