Raffaello Cheese cake




  • 1 packet Marie biscuits (Strand Palace Agency)
  • 2 spoons desiccated coconut
  • 50g roasted almonds (Lamb brand)
  • 100g melted butter (Valio)
  • 300g white chocolate, melted
  • 200ml whipped fresh cream
  • 500g cream cheese
  • 60mls coconut milk
  • 50g shredded coconut
  • Juice of ½ a lime
  • Extra shredded coconut for garnish
  • Raffaello chocolates

Put the biscuits, almonds and the 2 spoons of coconut into a food processor and whizz into fine crumbs. Melt the butter and whizz into the crumbs. Press into a springform 18 cm cake tin to form a crust, chill for 30 minutes. Pour the fresh cream in a bowl, whisk until stiff, set aside.

In a separate bowl, beat the cream cheese till soft, whisk in the white chocolate and coconut milk. Next fold in the coconut milk, lime juice and whipped cream. Pour the mixture into the biscuit crust. Allow setting in a refrigerator. Garnish with the chocolates and coconut.
