Father’s Day apple crumble

Ingredients
For the crumble
- 600g plain flour
- 300g unsalted butter (Valio)
- 2 tsp baking powder
- 170g icing sugar
- 1 tsp vanilla extract
- Finely grated zest ½ lemon
You will also need
- 6 large green apples, peeled, cored and diced
- 3 tbsp sugar
- 50g butter
- 2-3 heaped tsp cinnamon
- 1 jar apple sauce (Colman’s)
- 2-3 tbsp sultanas (optional)
- 1 tbsp icing sugar for dusting
- Vanilla ice-cream for serving (Carte D’or)

Method
Start this recipe by making the filling. Melt the butter and 2 tbsp sugar together in a large ban and cook down the apples and cinnamon for 5-8 minutes until slightly soft. Allow to cool then stir in the apple sauce and sultanas if using. Next, make a crumble by blitzing together all the crumble ingredients in a food processor. Line the base and sides of a round baking tin with baking paper. Press down 2/3 of the crumble mixture into the base and sides. Carefully spoon in the apple filling and top with the remaining crumble. Sprinkle over the remaining tbsp of sugar and bake in the oven at 200`c for 35-40 minutes or until golden. Allow to cool slightly before removing from the tin. Serve either hot or cold with vanilla ice-cream.
