Grilled peaches with mascarpone cream, blueberries and crumbled shortbread

Ingredients

  • 4 peaches, halved and stone removed
  • 1 tbsp icing sugar
  • 2 tbsp honey
  • 1 tub mascarpone cheese (Zanetti)
  • 1 tsp orange zest
  • 1 tsp chopped fresh mint
  • 1 box fresh blueberries
  • 4 shortbread biscuits (Walkers)
  • Fresh mint leaves to decorate and extra icing sugar

Method

Dust the peach halves with icing sugar and quickly pan fry on a griddle pan to brown. Next, transfer to an oven dish and drizzle with honey and roast for 5 minutes, depending on how ripe they are. Meanwhile, mix together the mascarpone, orange zest and fresh mint. When you are ready to serve, place the peach halves on a large serving dish or board. Spoon over the mascarpone and toss over the blueberries. Crumble the shortbread and sprinkle over. Decorate with fresh mint leaves and icing sugar and serve immediately.
