Chilli and lime king prawn skewers with mango salad and coriander mayo

Ingredients

For the skewers

  • 12 king prawns, heads removed
  • Zest and juice 1 lime
  • 3 cloves garlic, finely chopped
  • 1 chilli, finely chopped
  • Good drizzle olive oil
  • Salt and pepper to taste

For the mayo

  • 3 tbsp garlic mayonnaise (Hellmann’s)
  • 2 tbsp chopped fresh coriander
  • Squeeze lime juice

For the salad

  • ½ mango, sliced
  • 1 carrot, shredded
  • 1 cucumber, finely shredded
  • Few cherry tomatoes, halved
  • Juice and zest 1 lime
  • 1 clove garlic, finely chopped
  • 1 red chilli, finely chopped
  • Few coriander leaves
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp olive oil

Method

This is a very easy recipe. Mix together the prawns marinade and allow to infuse for 2 hours. When ready, thread onto skewers and BBQ grill for 2 minutes on each side. For the coriander mayo, just blitz together the ingredients to a smooth green mayo. Next, mix all the salad ingredients together in a bowl and serve with the cooked prawn skewers and coriander mayo.
