Brie and fig filo tart

Ingredients

  • 3 sheets filo pastry
  • 2 tbsp olive oil for brushing
  • 2 Brie rounds (Emborg)
  • 3 tbsp fig jam
  • 6 fresh figs, cut in half
  • 1 tsp fresh thyme leaves
  • 2 tbsp runny honey
  • 6 walnut halves

Method

Grease a flan tin with a little oil. Brush a sheet of filo with oil and lay another sheet on top. Do the same with the 3rd sheet. Lay into the greased flan tin and ruffle up the extra around the edges. Spread over the fig jam into the bottom. Cut the Brie cheese into thick slices and arrange into the bottom of the flan along with the fig halves. Sprinkle over the thyme leaves and break the walnut halves and toss over. Brush the filo pastry edges with oil and bake in the oven at 200 for 25-30 minutes.
