Honey and mustard chicken salad

Ingredients

For the salad

  • 2 chicken breasts, sliced in half
  • Salt and pepper
  • 2 tbsp mustard sauce (Thomy)
  • 1 tbsp olive oil
  • 2 tbsp blueberries
  • 1 ripe avocado, peeled and sliced
  • 1 tbsp toasted flaked almonds
  • 1 stick celery, sliced
  • 1 green apple, cored and sliced
  • 1 handful rocket leaves

For the dressing

  • 3 tbsp mustard sauce (Thomy)
  • 2 tbsp Greek yogurt
  • 2 tbsp honey

Method

To prepare the chicken, season the sliced chicken with salt and pepper and brush with the 2 tbsp mustard sauce. Heat a pan with oil and fry the chicken on both sides to cook or alternatively BBQ. Meanwhile, mix together the dressing ingredients in a large bowl. Add in the celery, apple and slice the cooked chicken and add to the bowl. Place the rocket leaves into the base or 2 deep pasta plates and spoon over the chicken salad. Toss over the blueberries, toasted flaked almonds and lay over the sliced avocado.
