Bacon wrapped lamb chops with prunes & Gorgonzola, tomato-walnut pesto, minted peas

Ingredients

  • 8 Lamb chops
  • 8 prunes
  • 100g Gorgonzola cheese
  • Dijon mustard
  • 8 slices streaky bacon (Fior di Vita)
  • 1 large tomato peeled, de seeded and diced
  • 100g chopped walnuts
  • 1 garlic clove
  • 1 cup frozen peas
  • Fresh mint 
  • Fresh parsley
  • Butter for cooking
  • Extra virgin olive oil
  • Fresh seasoning

Method

Season the lamb with salt and pepper and brush with the mustard.

Push a knob of Gorgonzola inside the prunes and place one on each chop, wrap around with the streaky bacon. Place onto a baking tray, knob each chop with butter and cook at a pre heated oven on high temperature for 12 minutes. 

Throw the peas in a frying pan with a spoon of butter, warm up, season with salt and pepper, stir in chopped mint leaves. 

To prepare the pesto, simply whizz together the walnuts, garlic, parsley and extra mint. Remove from machine and mix with the chopped tomato, bind with enough olive oil, season to taste.
