Wholemeal fusilli with curried prawns and sweet potatoes

Serves:

Ingredients

  • 400g brown fusilli (Misura)
  • 1 sweet , peeled and finely chopped
  • 2 cloves garlic
  • 1 onion, sliced
  • 8 tiger prawns, peeled
  • 2 tbsp hot curry powder
  • 1 tin coconut milk
  • 1 tin tomato polpa
  • Fresh coriander
  • 2 tbsp vegetable oil

Method

Cook the onion and garlic in the oil until soft. Next add the sweet potato and curry powder, cook for a few minutes. Add the prawns, tomato and coconut milk, simmer for 10 minutes. Cook the pasta in boiling salted water. Drain and stir into the sauce. Finish with a handful of chopped coriander.
