Wholemeal fusilli with curried prawns and sweet potatoes
Serves:
Ingredients
- 400g brown fusilli (Misura)
- 1 sweet , peeled and finely chopped
- 2 cloves garlic
- 1 onion, sliced
- 8 tiger prawns, peeled
- 2 tbsp hot curry powder
- 1 tin coconut milk
- 1 tin tomato polpa
- Fresh coriander
- 2 tbsp vegetable oil
Method
Cook the onion and garlic in the oil until soft. Next add the sweet potato and curry powder, cook for a few minutes. Add the prawns, tomato and coconut milk, simmer for 10 minutes. Cook the pasta in boiling salted water. Drain and stir into the sauce. Finish with a handful of chopped coriander.
