Stuffed cold pasta salad

Ingredients

  • 1 packet large pasta shells (Natureline)
  • 2 cans tuna tuna in oil, drained (Redelmar)
  • 1 can artichokes hearts, sliced
  • 1 tomato, seeds removed and diced
  • 2 tbsp. crushed roasted almonds (Lamb brand)
  • 1 carrot, peeled and grated
  • 1 small cucumber, cut into small dice
  • zest of lemon
  • 1 finely chopped onion
  • 2 cloves garlic
  • 2 tbsp. chopped mint, basil and parsley to taste
  • 3 tbsp. mayonnaise (Hellmanns)
  • Cayenne pepper for dusting
  • Mixed salad leaves for serving
  • Olive oil (Borges)
  • 1 lemon, cut into wedges

Method

Cook the pasta shells in plenty of boiling salted water, drain and refresh under cold running water. Place on a tray with extra virgin olive oil and drizzle the pasta lightly with more oil. In a large mixing bowl, mix together the tuna, sliced artichoke hearts, tomato, almonds, grated carrot, cucumber, onion, garlic, lemon zest and herbs. Bind all the ingredients together with the mayonnaise. Season with salt and pepper to taste. Stuff the pasta shells with the filling using a spoon or piping bag. Serve on a serving dish dressed with the salad leaves, sprinkle lightly with cayenne pepper and olive oil and the lemon wedges on the side.
