Vegetarian Shepherd’s pie

Ingredients

  • 2 large potatoes peeled and diced
  • 2 tbsp. flour
  • Pepper and salt
  • 200g mushrooms, diced
  • 2 carrots, peeled and diced
  • 1 zucchini, diced
  • 1 tbsp. margarine (Flora light)
  • 1 tbsp. tomato paste
  • Fresh thyme, rosemary and parsley
  • Vegetable stock (Knorr)
  • 1 x 200g tin sweet corn, drained
  • 1 cup frozen peas (Emborg)
  • 1 x 400g tin cooked lentils, rinsed and drained
  • 1 tub light cream cheese
  • 2 tbsp grated Parmesan cheese

Method

Start this recipe by cooking the potatoes in a pan of boiling water until soft. Meanwhile, season the flour with salt and pepper and roll in the mushrooms, carrots and zucchini to coat. Heat the margarine in a large pan and cook the vegetables for 3-4 minutes. Add in the tomato paste, herbs and ½ cup vegetable stock and stir. Add in the frozen peas and cook for 3-4 minutes before adding in the cooked tinned lentils and sweet corn. When the potatoes are cooked through, drain and mash with the cream cheese, an extra knob of margarine and season well with salt and pepper. Spoon the vegetables in an oven proof baking dish and carefully top with the mash potatoes. Sprinkle over the Parmesan cheese and bake in a hot oven at 200`c for 15-20 minutes or until golden brown.

Method

Ibda din ir-riċetta billi ssajjar il-patata ġo borma bl-ilma jagħli sakemm tkun ratba. Sadanittant, ħawwar id-dqiq bil-melħ u l-bżar u rrombla fih il-faqqiegħ, il-karrotti u l-zucchini sakemm jinksew. Saħħan il-marġerina f’taġen kbir u sajjar il-ħaxix għal 3-4 minuti. Żid il-pejst tat-tadam, il-ħxejjex aromatiċi u nofs kikkra stokk tal-ħaxix u ħawwad. Żid il-piżelli tal-friża u sajjar għal 3-4 minuti qabel ma żżid l-għads imsajjar u l-qamħ ħelu. Meta l-patata tkun imsajra, ixxotta u għaffeġ mal-ġobon kremuż, ftit aktar marġerina u ħawwar sew bil-melħ u l-bżar. Ifrex il-ħxejjex f’dixx tal-ħami u b’attenzjoni aqleb il-patata maxx. Roxx fuq il-ġobon parmiġġjan u aħmi ġo forn jaħraq f’temperatura ta’ 200°C għal 15-20 minuta jew sakemm tieħu kulur kannella dehbi.
