Baba Ganoush with toasted pitta bread

Ingredients

  • 2 small aubergines
  • 3 cloves garlic, halved
  • 2 heaped tbsp. tahini
  • Juice half lemon
  • Good pinch salt
  • 2 tbsp Greek yogurt
  • 1 tsp zaatar
  • 1 tsp cumin
  • 2 tbsp olive oil
  • 1 tbsp toasted pine nuts
  • 1 tbsp chopped parsley
  • 1 packet pitta bread (Leicester)

Method

Start this recipe by cutting the aubergines in half. Drizzle with a little olive oil, season with salt and pepper and stick the garlic halves into the flesh. Wrap in foil and bake in the oven at 200°C for 45-60 minutes. Allow to cool, scoop out the flesh and mash with a fork. Add in the tahini, lemon juice, salt, yogurt , 1 tbsp olive oil, cumin and zaatar and mix together well. Spoon decoratively onto a large plate, drizzle with olive oil and decorate with extra spices, chopped parsley and pine nuts. Cut the pitta bread into triangles, drizzle with oil and toast in the oven for 3-4 minutes till crunchy. Serve on the side with the Baba Ganoush.
