Gluten free Chicken Schnitzel with honey & mustard sauce, peppery sweet potato fries

Ingredients
For the sweet potato fries
- 2 sweet potatoes
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Cajun pepper
- Fresh ground black pepper
- 1 tbsp chopped rosemary
- 2 tbsp olive oil
For the chicken
- 50g gluten-free corn flakes (Schar)
- 1 tbsp smoked paprika
- 1 tsp dried oregano
- 1 tbsp chopped fresh parsley
- 2 tbsp grated Parmesan cheese
- 2 chicken breasts
- Salt and pepper
- 2 tbsp gluten- free flour (Schar)
- 2 eggs, beaten
For the honey mustard sauce
- 4 spoons Mayonnaise
- 1 spoon grain mustard
- 1 spoon Dijon
- 1 teaspoon honey
- Juice of half a lemon
Method
Wash and scrub the sweet potatoes, cut into thin, long sticks and pat dry. Place into a large bowl with the remaining ingredients and mix together well to coat evenly. Place onto a baking tray and cook for 20-25 minutes until crispy and cooked through. Meanwhile, crush the cornflakes and mix with smoked paprika, oregano, parsley and cheese. Holding the chicken breasts flat with the palm of your hands and slice into thin scallops and season with salt and pepper. Coat in gluten-free flour, pass through the beaten egg and coat with the seasoned corn flakes. Place onto a baking tray, drizzle with olive oil and bake for 10-15 minutes until golden and crispy. For the mustard sauce, simply whisk all the ingredients together and serve on the side with the sweet potato fries and Chicken Schnitzel.

Poġġi fuq trej tal-ħami u sajjar għal 20-25 minuta sakemm jiġu jqarmċu u jsiru. Sadanittant, għaffeġ il-cornflakes u ħawwad mal-paprika affumikata, origanu, tursin u ġobon. Żomm is-sider tat-tiġieġ ċatt u qatta’ f’biċċiet irqaq u ħawwar bil-melħ u l-bżar. Iksi bid-dqiq mingħajr glutina, għaddi mill-bajd imħabbat u iksi bil-cornflakes imħawwar. Poġġi fuq trej tal-ħami, xerred biż-żejt taż-żebbuġa u aħmi għal 10-15-il minuta sakemm ikun dehbi u jqarmeċ.
