Roasted cauliflower with whipped feta, pomegranate and tahini dressing

Ingredients

For the cauliflower

  • 1 small cauliflower, cut into florets
  • 1 `Garlic flavoured` oven roasting bag (Maggi)
  • 1 tsp cumin
  • 2 tsp smoked paprika

For the dressing

  • 1 clove garlic
  • Juice 1 lemon
  • 2 tbsp Greek yogurt (Kolios)
  • 2 tbsp tahini
  • 2 tbsp water
  • Salt and pepper to taste

For the whipped feta

  • 200g feta or Danish cheese (Emborg)
  • Good drizzle olive oil
  • 1 tbsp Greek yogurt

Method

For the cauliflower, mix together the garlic flavoured spice mix with the garlic, cumin and smoked paprika. Place in the oven roasting bag along with the cauliflower and seal the bag. Shake together well to coat and roast in the oven at 200°C for 15-20 minutes. For the dressing, blitz together the garlic, lemon juice, Greek yogurt, tahini and water. Season with salt and pepper and blitz. Do the same for the whipped feta, just blitz all the ingredients together. To serve, spread the whipped feta onto 2 plates and place the roasted cauliflower on one side. Spoon over the pomegranate kernels and fresh mint leaves and drizzle over the dressing.
