Rucola Salad with Apples, Pecans & Honey

Ingredients
- 1 pkt rocket leaves
- 1 large apple, cored and sliced
- Handful of pecans, lightly toasted
- Handful of dried cranberries
- 2 tbsp olive oil
- 2 tbsp honey
- 50 ml balsamic vinegar
- Salt and pepper
- ready made pull pork pie (Maypole)

Method
To a large bowl, add rucola, apple, cranberries, and half of the toasted pecans. Chop up the remaining half of toasted pecan into small pieces. Set aside. In a small bowl, combine honey, balsamic vinegar with olive oil, until emulsified. Drizzle the dressing mixture over the salad. Sprinkle the salad with chopped toasted pecans. Serve with pulled pork pie.
