Puff pastry wrapped chicken with spinach and ricotta

Ingredients

  • 200g ricotta cheese
  • 2 eggs, separated
  • 80g grated parmesan
  • 80g frozen spinach
  • 1 tsp nutmeg
  • 1 tsp rosemary
  • 1 tbsp. cranberry sauce
  • 1 sheet pre-rolled puff Pastry (Acqua e Farina)
  • 3 cooked chicken thighs
  • 1 tsp sesame seeds

Method

In a bowl, mix together the ricotta,1 egg yolk, 2 egg whites, grated Parmesan, spinach, nutmeg and rosemary. Lay the pre-rolled sheet of puff pastry onto your work surface and brush over the cranberry sauce. Spread the ricotta and spinach mix over, leaving the width of three fingers as a boarder without the filling. Cut the chicken thighs in half and lay them in a straight line down the middle. Roll the pastry up tightly and press together the ends. Place onto a baking sheet and brush all over with the remaining egg yolk. Sprinkle over the sesame seeds and bake at 180°C for approximately 25 minutes or until nicely browned. Allow to rest to cool down slightly before cutting into slices and serving.

Method

Fi skutella, ħawwad flimkien l-irkotta, l-isfar tal-bajd, 2 abjad tal-bajd, il-parmiġġjan maħkuk, l-ispinaċi, in-noċemuskata u l-klin. Iftaħ u poġġi l-għaġina rrumblata fuq wiċċ ċatt u idlek biz-zalza tal-cranberry. Ifrex it-taħlita tal-irkotta u l-ispinaċi fuqha, u ħalli l-wisa’ ta’ tlett iswaba’ bħala bordura mingħajr il-mili. Qatta’ l-koxox tat-tiġieġ min-nofs u poġġihom f’linja dritta fin-nofs. Irrombla l-għaġina sewwa u agħfas it-truf flimkien. Poġġi fuq folja tal-ħami u idlek kollox bl-isfar tal-bajd li jifdal. Roxx fuqha ż-żerriegħa tal-ġulġlien u aħmi f’temperatura ta’ 180°C għal bejn wieħed u ieħor 25 minuta jew sakemm issir kannella. Ħalliha tiksaħ ftit qabel ma taqta’ flieli u sservi.
