Chicken fillet burgers with crispy ham and creamy burrata

Ingredients

2 small chicken breasts (SPA)
Salt and pepper to season
1 tbsp olive oil
2 heaped tbsp green basil pesto
6 slices serrano ham (Casadamont)
2 brioche burger buns
1 large ripe tomato, thinly sliced
2 tbsp garlic mayonnaise (Hellmans)
1 buratta (Zanetti)
Potato wedges or fries for serving

Method

Cut the chicken breasts in half horizontally, season with salt and pepper and fry in a pan with the oil till golden brown and cooked through. Place the serannno ham onto a tray or plate and grill in the oven or microwave. To put together, split the brioche buns and toast in a pan. Spread the top with mayo and the bottom with the pesto. lay the chicken breast onto the pesto, followed by the crispy serrano ham. Llay on sliced tomato and cut the buratta in half and place a piece on each. Cover with the bun top and serve with the potato wedges or fries on the side.
