Broccoli and cheese chicken pockets with sweet potato and kale

Ingredients

  • 2 small chicken breast (Dewfresh)
  • 60g frozen broccoli, defrosted
  • 1 spring onion, finely sliced
  • 60g red Leicester cheese, grated
  • 50g Parmesan cheese, grated
  • 2 slices streaky bacon
  • 2 tbsp. olive oil
  • 1 sweet potato, peeled and diced
  • ½ red chili, finely chopped
  • 1 small bunch kale leaves, stalks removed

Method

To make the filling, chop the defrosted broccoli and mix with the spring onion, red Leicester and Parmesan cheese. Using a sharp knife make an incision lengthwise on the side of each chicken breast to create a pocket and stuff with the filling. Wrap a piece of bacon around each breast and seal in a hot pan with a drizzle of olive oil for 2 minutes on both sides. Place onto a baking dish and continue cooking in the oven at 200°C for 12-15 minutes. Meanwhile, heat a little oil in the same pan and sauté together the chili and sweet potato until cooked and soft. In another pan, season and serve on the sweet potato with the chicken on top. Also, quickly sauté the kale leaves in another pan and serve together with the cooked sweet potatoes on 2 large serving plates with the chicken pockets cut in half and served on top.

  • nofs bżaru aħmar pikkanti
  • mazz kale

Method

Biex tagħmel il-mili, qatta’ l-brokkli u ħallat mal-basla ħadra, ġobon leicester aħmar u ġobon parmiġġjan. Bl-użu ta’ sikkina taqta’, agħmel inċiżjoni fit-tul fil-ġenb ta’ kull sider tat-tiġieġ biex toħloq but u imla bit-taħlita. Kebbeb biċċa bejken madwar kull sider u ssiġilla ġo taġen jaħraq bi ftit żejt taż-żebbuġa għal 2 minuti miż-żewġ naħat. Poġġi fuq dixx tal-ħami u kompli sajjar fil-forn f’temperatura ta’ 200°C għal 12-15-il minuta. Sadanittant saħħan ftit żejt fl-istess taġen u qalli flimkien il-bżar aħmar u l-patata ħelwa sakemm issir u tirtab. Sajjar ukoll il-weraq tal-kale f’taġen ieħor u servi flimkien mal-patata ħelwa msajra fuq 2 platti kbar bil-pockets tat-tiġieġ maqtugħin min-nofs u servuti fil-wiċċ.
