Lemon granita

Ingredients

  • Juice of 4 lemons
  • 500ml water
  • 120g sugar
  • Zest of a lemon

 

Method

Heat the water and sugar over medium heat just until the sugar is dissolved. Add in the lemon zest and juice. Pour the mixture into a shallow metal dish that goes into your freezer and freeze for 1 hour. Using a fork, scrape the sides of the granita and return back to the freezer for up to 2 1/2 to 3 hours. Repeat this process until you have a nice slushy consistency. Serve the lemon granita into frozen hollowed lemon halves, garnish with fresh mint and berries.
