Auntie Gola`s marinated tuna with pepper and caper sauce

Ingredients

For the tuna

  • 3 pieces fresh tuna
  • 2 cloves garlic, crushed
  • 1 tbsp olive oil (PREGO)
  • Juice of a lemon
  • 1 tbsp chopped mint
  • Fresh seasoning

For the sauce

  • 1 tbsp olive oil (PREGO)
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 celery stick, finely chopped
  • 1 red chilli, finely chopped
  • 3 mixed peppers, cut into strips
  • 1 tbsp tomato puree
  • 1 x 400g tin tomato pulp (PREGO)
  • 2 tbsp capers (CAMEL BRAND)
  • 150g small black olives, stoned
  • Fresh seasoning
  • 300ml water

 

Method

Start this recipe by marinating the tuna. Mix together the ingredients and season well with salt and pepper. Pour the juices over the tuna, cover with cling film and allow to marinate for an hour. Meanwhile, prepare the sauce by heating the oil in a large pan. Add the garlic, onion, celery and chilli and sauté together for 5 minutes. Add in the pepper strips and cook for 4 minutes. Add in the tomato puree, tomato pulp, capers and olives and mix together well. Season well with salt and pepper, and then pour in the water and allow the sauce to cook for 15-20 minutes. You may need to add in a little extra water if the sauce becomes to dry. When the sauce is ready, turn off the heat and cook the marinated tuna in a griddle pan. Serve the cooked tuna on large serving plates on top of a generous serving of the pepper and caper sauce.
