Lemon and strawberry tiramisu

Ingredients
- 1 packet savioardi fingers
- 400ml lemon soaking syrup
- 1 shot limoncello
- 50g white chocolate, chopped
- 10 large strawberries, sliced
- 150g ricotta (Galbani)
- 200g mascarpone cheese (Galbani)
- 60g icing sugar
- 1 tsp vanilla
- Zest 1 lemon

Method
Start this recipe by making the cream filling. Place the ricotta, mascarpone, icing sugar, lemon zest and vanilla into a food processor and blitz together till smooth. To put together, soak the fingers and place into the bottom of 4 glasses. Drizzle with a little limoncello. Spread over half of the cream filling, followed by a layer of strawberries and chopped white chocolate. Repeat this process again with the remaining ingredients and place into the fridge to set for 30 minutes.
