Grilled Swordfish with capers and mustard dressing and roasted tomato salad

Ingredients
For the dressing
- 1 tbsp. English mustard (Colman’s)
- Juice 1 lemon
- Zest of 1 orange
- 100ml olive oil
- 1 tbsp. chopped capers
- Freshly ground black pepper
You will also need
- 2 large tomatoes
- Fresh basil leaves
- 2 garlic cloves
- Salt & freshly ground pepper
- 2 swordfish steaks
- 1 green chili pepper, finely chopped
- Juice 1 lime
- 1 tbsp. fresh coriander, finely chopped
- 1 tsp smoked paprika
- 1 tbsp. honey
Method
Slice the tomatoes into 1 cm slices and lay on a baking tray with the basil and garlic slices on top. Drizzle with olive oil and crushed black pepper and bake in a hot oven at 200°C for 5 minutes. Meanwhile, mix together the green chili, honey, smoked paprika and lime juice and use to brush the fish on both sides. Grill the fish on a griddle pan or in the oven for 10 minutes. Prepare your dressing by simply whisk together all the dressing ingredients.. To serve, drizzle the swordfish with the mustard dressing and serve accompanied with the grilled tomato salad.
