Chocolate whisky and coffee mouse

Ingredients

  • 200g dark chocolate (Novi)
  • 2 eggs, separated (Coccodi)
  • 1 knob unsalted butter
  • 280ml double cream (Elmlea)
  • 1 shot cold espresso
  • 250ml whisky cream liqueur 
  • Grated chocolate or cocoa powder to decorate (Loaded pantry)

Method

Whip the double cream to stiff peaks, stir in the liqueur and espresso and put aside. Next, melt the chocolate and add in the butter to melt. Allow to cool down before mixing in the egg yolks. Fold in 1/3 of the whipped cream into the chocolate mixture, followed by 2 stiffly whipped egg whites. Layer the chocolate mouse into glass alternately with the remaining whipped cream and chill. Serve decorated with chocolate or cocoa powder.
