Cheddar cheese and onion flatbreads with smoked ham

Ingredients

For the flatbreads

  • 300g self-raising flour
  • 1 tsp baking powder
  • Pinch salt
  • 150g Greek yogurt 
  • Good drizzle olive oil (Borges)
  • 50-100ml warm water 

You will also need

  • 200g sliced smoked ham
  • 1500g cheddar cheese (Emborg)
  • 1 small onion, finely sliced

Method

To make the flatbread, knead together all the ingredients, adding in as much of the water to make a smooth dough. Cover and allow to rest for 15-20 minutes. When ready, divide into 8 pieces and roll out to a large disk. Fill with Cheddar cheese, smoked ham and onion and close up, flattening well. Heat the pan with olive oil and fry the flatbreads for 3-5 minutes on both sides until golden and cooked through.
