Cheesy Chicken Rolls (Danish Cheese)




1 whole Chicken Breast (Strand palace agency)
2 Portions Plain White Cheese (Camel brand)
50g Softened Butter (Lakeland)
2 Garlic Cloves
Fresh Basil
1 tsp Paprika
100g Shredded Mozzarella
1 pkt Potato mash Powder
Fresh Parsley
Olive Oil (Borges)


Cut the chicken breast in half, then slice each half from the middle. You will get 4 thin portions.
Place each piece between cling film or baking paper and flatten out with a kitchen mallet.
Season well with paprika salt & pepper from both sides.
Mince the garlic and add it to the softened butter.
Finely chop the basil and add it to the butter.
Spread the butter onto each chicken piece.
Put the cheese into 4 rectangles and roll it inside the chicken and secure with a toothpick.
Place some oil in a baking tray, add the chicken and brush the remaining butter on top.
Cover with aluminum foil and bake in a preheated 220°c oven for 25 minutes.
Then uncover, drizzle some mozzarella on top and broil for about 5 minutes until it’s nice and bubbly.
Serve with baked or mashed potato.
