Almond and walnut tart with cinnamon pastry

Ingredients

For the pastry

  • 250g plain flour 
  • Pinch baking powder
  • 125g margarine (Stork)
  • 1 tsp ground cinnamon
  • 75g icing sugar 

For the filling

  • 100g ground almonds (Good Earth)
  • 100g icing sugar
  • 1 tbsp vanilla
  • Zest 1 lemon
  • 1 whole egg plus 1 white (Le Naturelle)
  • 150g walnuts (Good Earth)
  • 1 tbsp caster sugar

Method

Start by making the pastry. Blitz together all the ingredients to a crumb then add in enough water to bind to a pastry. Chill for 15 minutes then use to line a 30cm flutted flan tin. To make the filling, mix together the ground almonds, icing sugar, lemon zest, vanilla and eggs. Add in the walnuts, mix together and spoon into the flan tin. Even out, sprinkle with the caster sugar and bake in the oven at 80°C for 45-50 minutes or until cooked through. Serve either hot or at room temperature.
