Turkey ginger and sweetcorn soup

Ingredients

  • 1 tbsp olive oil (Borges)
  • 2 cloves garlic, finely chopped
  • 1 red chilli, finely chopped
  • Small piece fresh ginger, peeled and finely chopped
  • 4 spring onions, sliced
  • 1 large tin approx. 350g sweetcorn, drained
  • 400g cooked turkey, pulled
  • 1litre chicken stock (Knorr chicken)
  • 2 eggs (Coccodi)
  • 1 tbsp soy sauce (Tiger tiger)
  • 1 tbsp chopped fresh coriander

Method

Start by frying together the garlic, chilli, ginger and spring onions till soft. Add in the 1 litre chicken stock, pulled turkey and bring to the boil. Meanwhile, blitz 250g of the sweetcorn to a puree and add to the pan. Season with salt and pepper and cook for 5-10 minutes. Remove off the heat and stir in the 2 beaten eggs, whisking constantly. Stir in the soy sauce and chopped coriander and serve immediately into bowls with the remaining sweetcorn on top.
