Left-over turkey puff pastry ring

Ingredients

  • 1 large round pre-rolled puff pastry circle
  • 1 egg, beaten (Coccodi)
  • 1 jar caramelized red onion marmalade (Mackays)
  • 500g cooked roasted turkey, diced
  • 250g Greek cheese (Emborg)
  • 4 roasted red peppers, skin removed and sliced
  • 3 spring onions, sliced
  • 2 tbsp chopped pistachios
  • 1 tbsp sesame seeds

Method

Start by unrolling the puff pastry circle and brush all over lightly with beaten egg. Using a knife, starting in the middle cut 8 slits into the circle outwards, leaving a solid ring on the perimeter. Spread the onion marmalade onto this ring and crumble over half of the Greek cheese. Top with the diced turkey and then the roasted peppers. Sprinkle over the spring onions, crumble over the remaining Greek cheese. Fold the points of pastry in the center outwards, stretching to the far edge. Brush the pastry all over with egg wash and sprinkle over the pistachios. Bake in the oven at 200`c for 30-35 minutes until golden brown.
