Tomato, grilled peach and burrata salad

Ingredients

  • 1 handful mixed coloured cherry tomatoes, halved
  • 2 fresh peaches, cut into 6 pieces
  • 2 thick slices toasted bread
  • 1 tbsp toasted pine nuts
  • Bunch fresh basil leaves
  • Good drizzle balsamic vinegar and extra virgin olive oil
  • Drizzle runny honey
  • 4 tbsp toasted garlic croutons (Tipiak)
  • 3 burrata cheeses (Zanetti)

Method

Start this recipe by grilling the peach on the BBQ grill or griddle pan.  Arrange decoratively on a large serving dish with the halved coloured cherry tomatoes. Place on the toasted bread in 1 corner of the dish and place a burrata half on each slice. Arrange the remaining burrata amongst the tomatoes and peaches. Drizzle liberally with balsamic and olive oil, then toss over the toasted pine nuts, fresh basil and garlic croutons and serve immediately.
