Spicy beef stew tortellini

Ingredients

  • 500 g thick cut beef steak
  • 2-3 tbsp. plain flour
  • 100g diced pancetta
  • 1 onion, finely chopped onion
  • 1 carrot, finely chopped carrot
  • 1 celery stick, finely chopped
  • 100g mushrooms
  • 1 bell pepper
  • 1 tsp cumin seeds
  • 1 tsp paprika
  • 1 tbsp. tomato paste
  • 1 x 200g can tomato polpa
  • 1 litre beef stock
  • 1 packet fresh frozen tortellini (Maypole)
  • 1 tbsp. chopped parsley
  • 2 tbsp. grated Parmesan cheese

Method

Cut the steak into strips, season with salt and pepper and roll in flour. Brown in a pan in 2 batches with 2 tbsp. olive oil and the cumin seeds. Add in the vegetables and continue to cook for further 2 minutes then stir in the paprika and tomato paste. Pour in the wine and evaporate, pour in the stock and simmer till meat is tender. Mix in the tortellini and cook further for 1 minute until the pasta is cooked. Serve immediately sprinkled with chopped parsley and grated cheese

Method

Aqta’ l-isteak fi strixxi, ħawwar bil-melħ u l-bżar u rrombla fid-dqiq. Sajjar f’taġen f’żewġ lottijiet b’żewġ imgħaref żejt taż-żebbuġa u ż-żrieragħ tal-kemmun. Żid il-ħaxix u kompli sajjar għal 2 minuti oħra, imbagħad ħawwad il-paprika u l-pejst tat-tadam. Ferra’ l-inbid u ħallih  jevapora, ferra’ l-istokk u ħalli t-taħlita ttektek sakemm il-laħam ikun tari. Ħallat it-tortellini u sajjar sakemm l-għaġin ikun lest. Servi immedjatament bit-tursin imqatta’ u l-ġobon maħkuk fil-wiċċ.
