Grilled chicken salad with grapes, rucola and walnut vinaigrette

Ingredients

  • 2 chicken breasts
  • 1 tbsp olive oil
  • Fresh seasoning
  • 10 black seedless grapes, halved
  • 50g walnut halves
  • 1 handful rucola leaves
  • 2 handfuls mixed salad leaves
  • Parmesan shavings

Walnut vinaigrette

  • 4 tbsp olive oil
  • 1 tbsp whole grain mustard
  • 1 tbsp balsamic vinegar
  • 1 clove garlic
  • 4 walnut halves
  • Fresh seasoning

Method

Start by slicing each chicken breast into 2 fillets, and season well with pepper and salt. Heat the oil in a griddle pan, and cook the chicken on both sides for about 4 minutes till golden brown. While the chicken is cooking make the walnut vinaigrette. Place all the ingredients together in a processor and pulse together to a creamy dressing. Place the rucola and mixed salad leaves in a bowl and add ½ of the walnut dressing. Mix well, and divide the salad leaves between 2 large salad plates. Arrange the remaining walnuts on top, along with the seedless grape halves. Place 2 pieces of the grilled chicken fillets on top of each salad, and drizzle over the remaining walnut vinaigrette. Serve sprinkled with parmesan shavings.

Method

Qatta’ l-isdra tat-tiġieġa f’żewġ fletti u ħawwarhom tajjeb bil-bżar u l-melħ. Saħħan iż-żejt f’taġen bil-grilja u sajjar it-tiġieġ miż-żewġ naħat għal madwar 4 minuti sakemm jiħmaru. Sakemm it-tiġieġ ikun qed isir, lesti l-vinaigrette tal-ġewż. Poġġi l-ingredjenti kollha f’food processor u ħabbathom flimkien biex tifforma taħlita kremuża. Poġġi l-weraq tal-aruka u tal-insalata fi skutella u żid nofs it-taħlita tal-ġewż. Ħawwad tajjeb u qassam il-weraq tal-insalata f’żewġ platti kbar. Poġġi l-ġewż li jkun fadal fil-wiċċ mal-għeneb mingħajr żerriegħa. Poġġi wkoll iż-żewġ fletti tat-tiġieġ fuq l-insalata u ferrex il-vinaigrette tal-ġewż li jkun fadal.
