Paccheri with ricotta and sun-dried tomatoes

Ingredients

400g Paccheri Pasta (Lamb brand)
250g Ricotta (Hanini)
50g Parmesan Cheese (Camel brand)
80g Sun-dried Tomatoes (Camel brand)
10ml Olive Oil (Borges)
Fresh Basil
Salt & Pepper

Method

Bring a large pot of salted water to a boil.
Boil the pasta. Time as instructed on the packet.
While the pasta is boiling, prepare the sauce.
In a large bowl combine the ricotta, grated Parmesan and olive oil.
Add 2 ladles of pasta water and mix the cheese until creamy.
Chop the sun-dried tomatoes and basil.
When the pasta is ready, discard the water and add it to the cheese.
Mix well, then finish it off with the sun dried tomatoes, basil and season well with salt & pepper.
