Grilled chicken in mango BBQ sauce

Ingredients
- 150g frozen mango cubes (Asiago)
- 3 limes
- 1 tbsp. fish sauce
- 1 tbsp. brown sugar
- 1 tbsp. siracha sauce
- 1 tsp minced garlic and ginger paste
- 6 boneless chicken thighs
- 1 spoon light olive oil
- Few fresh coriander leaves
Method
For the marinade, blitz together the mango cubes, the juice of 2 limes, fish sauce, oil, brown sugar, sriracha sauce & garlic paste until smooth. Rub the chicken thighs with salt and pepper and cover with the marinade. Allow to marinate in the fridge for 2 hours. Remove the chicken pieces from the fridge, heat up a large pan with the olive oil and grill on both sides till cooked through.
Reduce the remaining marinade together with 100 ml water for a couple of minutes until sauce thickens. Serve the chicken with the sauce and decorate with the remaining lime cut into wedges and fresh coriander leaves.

Ogħrok il-koxox tat-tiġieġ bil-melħ u l-bżar u għatti bl-immarinar. Ħalli mmarinat fil-fridge għal sagħtejn. Neħħi l-biċċiet tat-tiġieġ mill-fridge, saħħan taġen kbir biż-żejt taż-żebbuġa u ggrilja fuq iż-żewġ naħat sakemm isiru.
Naqqas l-immarinar li jifdal flimkien ma’ 100 ml ilma għal ftit minuti sakemm iz-zalza tiħxien. Servi t-tiġieġ biz-zalza u żejnu bil-luminċell li jifdal maqtugħ f’felli u weraq frisk tal-kosbor.
