Creamy coconut truffles

Ingredients

150g white chocolate, melted (Lamb Brand)
80g coconut cream
60g coconut oil (SPA)
2 tbsp coconut rum (Optional)
8 tbsp shredded coconut, lightly toasted
Extra toasted shredded coconut for decorating

Method

This is a very easy recipe. Just mix together the melted chocolate, coconut cream, coconut oil and rum till smooth, then stir in the 8 tbsp toasted shredded coconut. Place in the fridge for 30 minutes to firm up, then form into equal sized balls and roll into the extra toasted coconut to coat.
