Honey and lime chicken thighs

Ingredients

For the chicken
6 small boneless and skinless chicken thighs
Juice and zest 3 limes
3 tbsp honey
2 tbsp olive oil
4 cloves garlic, crushed
Salt and pepper
2 tbsp chopped fresh coriander
½ tsp cayenne pepper and chilli flakes
1 tsp cumin, onion powder and sweet paprika

You will also need for serving
2 servings cooked basmati rice (Lamb brand)
1 tbsp honey
Extra fresh coriander
Lime wedges

Method

Start this recipe by trimming any excess fat off the chicken and cut a few slits in the flesh to take in all the flavours. Place in a bowl, mix in all the ingredients and coat well. Allow to marinate overnight if possible or at least a few hours. When ready, pan fry the chicken until golden and crispy around the edges. Serve the thighs on top of cooked rice with lime wedges on the side. Drizzle with extra honey and with fresh coriander leaves on top.
