Charmaine`s bragjoli

Ingredients

For the bragjoli

  • 1 medium sized onion, chopped
  • 1 tbsp olive oil (PREGO)
  • 2 tbsp meat seasoning
  • 3 cloves garlic, crushed
  • 300g minced meat
  • 1 Maltese sausage
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 3 slices flank steak
  • 3 hardboiled eggs
  • 3 slices of bacon

For the Sauce

  • 1 small tin tomato polpa (PREGO)
  • 3 tbs tomato paste
  • 2 tsp curry powder
  • 2 carrots, diced
  • 2 sliced mushrooms, sautéed
  • 100g peas
  • 1 tbs Worcestershire sauce
  • Chopped sprigs of parsley
  • 1 tomato, diced
  • 1 potato, diced
  • ½ cup red wine
  • 1 cup beef stock (KNORR)
  • A few bay leaves

Method

To make the stuffing, fry half the onions and the garlic in olive oil, add the minced meat, the meat seasoning, Worcestershire and soy sauce. Add the Maltese sausage and fry until meat is cooked. Place the mixture in a food processor and add the raw eggs; blend into a smooth mixture. Next, flatten the flank steak, line with bacon and spoon on the blended minced stuffing. Put the hard boiled egg in the middle and roll up the bragjoli tightly securing with cocktail sticks. Shallow-fry the bragjoli in a pan to seal and brown. Remove the bragjoli from the pan and put aside. Add the other half of the onion and garlic to the same pan and cook. Add the carrots, bay leaves, and the tomato paste. Add the curry powder and the wine and let the mixture to reduce to medium thickness. Return the bragjoli back into the pan. Add the beef stock or water and the polpa. Leave it to simmer for 30 minutes until the meat is tender. Add the mushrooms, peas and the diced tomatoes. Let it simmer for a few minutes. When you are ready to serve, remove the cocktail sticks, slice the bragjoli in half and serve with the gravy. Garnish with parsley. You can serve with some boiled potatoes.

  • Kuccarina soy sauce

Ghaz-zalza

  • Bott zghir polpa tat-tadam
  • 3mgharef kunserva
  • 2kuccarini curry
  • 2 karrotti mqattghin irqaq
  • 2 mushrooms, moqlija
  • 100g pizelli
  • 1mgharfa Worcestershire sauce
  • Tursin mithun
  • Tadama mqattgha
  • Patata mqattgha
  • ½ cup inbid ahmar
  • 1 cup stokk tal-beef
  • Weraq tar-rand

Method

Mili tal-bragjoli
Ghalli l-basla u t-tewm fiz-zejt taz-zebbuga, zid l-ikkapuljat, il-hwawar tal-laham, il-Worcestershire u soy sauce. Zid iz-zalzatt tal-Malti u qalli sakemm il-laham jissajjar sew. Poggi t-tahlita gewwa food processor, zid il-bajd nej u blendja sakemm ikollok it-tahlita mithuna tajjeb.

Il-Bragjoli
c-cattja l-slices tal-laham, ghamel il-bacon fuqha u poggi l-mili tal-bragjoli fuqha. Poggi l-bajda mghollija fin-nofs u kebbeb il-bragjoli. Ara li jkunu issikkati sew u ghalqa b’cocktail sticks. Aqlihom fi ftit zejt f’tagen ghal madwar 10 minuti.

Ghaz-zalza
Nehhi il-bragjoli mit-tagen u zommom ftit fil-genb. Zid nofs il-basla u it-tewm li baqa u sajjarhom. Zid il-karrotti, il-weraq tar-rand u l-kunserva. Zid il-curry u l-inbid u halli it-tahlita itektek sakemm l-inbid jinxtorb tikka. Erga itfa il-bragjoli. Zid l-istok tal-beef u il-polpa tad-tadam. Halliha ttektek ghal-madwar 30 minuta sakemm il-laham ikun sar. Zid il-mushrooms, pizelli u t-tadam imqattgha. Halliha ghal ftit minuti ohra.
