Cauliflower steaks with caramelized onions, halloumi and citrus tahini sauce

Ingredients

  • 1 Cauliflower
  • Extra virgin olive oil
  • 1 tsp` Ras el hanout`
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Juice and zest of 1 orange and lemon
  • 2 tbsp. tahina
  • 2 tbsp. extra virgin olive oil
  • 1 large onion, thinly sliced
  • 1 tsp brown sugar
  • 1 block halloumi cheese (Fior di Vita)
  • 2 tbsp. toasted pine nuts

Method

Slice the cauliflower into 3 cm thick steaks. Place on a baking tray, drizzle with olive oil, cover with aluminum foil and bake in a hot oven at 200°C for 10 minutes. Remove from the oven and leave the foil on top, allowing the cauliflower to steam until cool.  Uncover, sprinkle with ras el hanout, paprika and garlic powder and roast uncovered in the oven for 10 minutes on both sides. Meanwhile prepare the caramelized onion by cooking with a knob of butter until soft. Add in the brown sugar and cook down for 10 minutes to caramelize. Make a dressing by mixing together the orange and lemon zest and juice, together with the extra virgin olive oil and tahini. Meanwhile, slice and grill the halloumi cheese. Serve the cauliflower steaks topped with the caramelized onions, grilled halloumi cheese. Drizzle over the citrus dressing and sprinkle with pine nuts.

Method

Qatta’ l-pastarda fi steaks ħoxnin ta’ 3ċm. Poġġi fuq trej tal-ħami, xerred biż-żejt taż-żebbuġa, għatti b’folja tal-aluminju u aħmi f’forn jaħraq f’temperatura ta’ 200°C għal 10 minuti. Neħħi mill-forn u ħalli l-fojl fil-wiċċ, ħallih sakemm il-pastard jibred. Ikxef, roxx ir-ras el hanout, il-paprika u t-trab tat-tewm u ixwi mikxuf fil-forn għal 10 minuti miż-żewġ naħat. Fisser waqt li tipprepara l-basla kkaramellizzata billi ssajjar bi ftit butir sakemm tkun ratba. Żid iz-zokkor ismar u sajjar għal 10 minuti biex tikkaramellizza. Agħmel dressing billi tħallat flimkien il-qoxra u l-meraq tal-larinġ u l-lumi, ż-żejt taż-żebbuġa u t-tahina. Sadanittant, qatta’ u ggrillja l-ġobon halloumi. Servi l-isteaks tal-pastard mimlija bil-basal ikkaramellizzat, u l-ġobon halloumi ggrilljat. Ifrex fil-wiċċ id-dressing taċ-ċitru u l-ġewż tal-arżnu.
