Vegetarian peanut stir-fry

Ingredients

For the sauce
2 tbsp sesame oil (Tiger tiger)
3 tbsp soy sauce (Tiger tiger)
1 tbsp honey
1 tbsp finely grated fresh ginger
2 tbsp peanut butter
100 ml hot water

For the stir-fry
1 red chilli, sliced
3 cloves garlic, crushed
1 tbsp sesame oil (Tiger tiger)
1 tsp finely grated fresh ginger
1 red pepper, deseeded and diced large
1 carrot, cut into ribbons
3 spring onions, finely sliced
1 packet vegan fillets, sliced (Quorn fillets)
2 tbsp chopped salted peanuts

For serving
100 g cooked noodles
1 tbsp extra chopped peanuts
1 tsp sesame seeds

Method

Start this recipe by making a sauce. Mix together the hot water, peanut butter, 1 tbsp ginger, 1 tbsp honey, 2 tbsp sesame oil and 3 tbsp soy and put aside for later. Next, heat 1 tbsp sesame oil in a deep pan or wok and quickly fry the red chili, garlic and ginger for 2 minutes. Add in the sliced fillets and cook for 3 minutes before adding in the red pepper, carrot and spring onion and cook for 3-4 minutes. Finally, stir in the prepared sauce and toss together well. Add in the cooked noodles to coat and add in the 2 tbsp chopped peanuts. Serve the noodles immediately into large bowls with extra peanuts, spring onions and sesame seeds on top.
