Tuna & Brie Bites

Ingredients
- 8 slices white French toast
- 8 hole muffin tray
- 1 large red onion
- 1 tbsp. sugar
- 1 knob butter
- 2 tbsp. cranberry sauce
- ½ red chili
- 50g kidney beans
- 100g tuna (Blue Angel)
- 2 tbsp. chopped fresh dill
- 400g brie cheese
Method
Start by trimming the crusts off the bread. Flatten slightly with a rolling pin and press in each muffin case. Bake at 180°C for 4-5 minutes until lightly browned. Meanwhile caramelize the onion with the sugar and butter in a pan for 10 minutes. Add in the chopped chili and cranberry sauce and cook for 2 minutes. Remove off the heat, allow to cool down before mixing in the kidney beans, tuna, fresh dill and brie cheese. Use this mixture to fill the bread cups before placing back into the oven for 3 minutes to melt the cheese.
