Beef fillet with soy and mushroom

Ingredients

  • 250g beef fillet
  • 10ml soy sauce
  • 100g mushroom
  • 100ml beef stock
  • Olive oil
  • 1 onion
  • 100ml red wine
  • Salt and pepper
  • 20g butter

Method

Preheat a frying pan with a dash of olive oil and quickly seal the fillet from both sides, adding butter to bask the fillet until golden brown. Allow to rest for 10 minutes, then continue to cook for 7 minutes in 180`c to have a medium grading. For the sauce, sauté the finely chopped onion and the mushrooms with a knob of butter till cooked, then add the red wine and reduce by half. Add the beef stock and reduce again. Finally add the soy sauce and serve.
