Curried lamb with raisins and walnuts
Serves:
Ingredients
- 300g lamb, cut into chunks
- 50g raisins
- 10g walnuts
- 20g butter
- Olive oil
- 20g mild curry
- 100ml vegetable stock
- Fresh seasoning
- 50ml coconut milk
Method
In a bowl mix the diced lamb (2cm by 2cm approximately) with the mild curry and oil and rub together. Preheat a thick bottomed pan and seal the spiced lamb in a little oil. Add the butter, vegetable stock and raisins and bring to boil. Turn down the heat and simmer for 30 minutes on a low heat. Finally add coconut milk, heat and serve.
