Stuffed calamari and seafood risotto

Ingredients

  • 1 calamari
  • 20g butter
  • 1 egg
  • 20g cream
  • 50g mixed seafood
  • 100g Arborio rice
  • 50g leeks
  • 2 cloves garlic
  • Fresh herbs
  • Fresh seasoning
  • 100ml white wine

Method

For seafood risotto Preheat the pan and cook the garlic and leeks in little oil till cooked, add raw rice and cook for 2 minutes. Add the white wine and reduce by half before adding the fish stock till the rice is nearly cooked. Finally add the seafood, herbs and the butter. For stuffed calamari As method above, but add the eggs and cream and use to fill the calamari. Cook for 20 minutes at 160`c.
