Quick vegetable soup with cheese tortellini

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 stalks celery, chopped
  • 1 large carrot, peeled and diced
  • 1 zucchini, diced
  • 600ml vegetable stock
  • 1 x 400g tin chopped tomatoes
  • ¼ tsp dried chilli flakes
  • Fresh seasoning
  • 200g fresh pasta cheese tortellini
  • 2 tbsp chopped parsley

 

 

 

Method

Heat the olive oil in a deep saucepan and sauté the onion and garlic together for 3 minutes. Add in the celery, carrots and zucchini and continue to cook for 5 more minutes. When the vegetables have begun to soften, pour in the vegetable stock and chopped tomatoes. Sprinkle in the chilli flakes and season well with salt and pepper. Cover the pan with a lid, turn down the heat and simmer the soup for a further 15 minutes. A few minutes before you wish to serve the soup, add the fresh pasta tortellini to the hot soup and continue to cook for 2-3 minutes, or until the tortellini are cooked through. Stir in the chopped parsley and serve in large, deep soup bowls.

  • basla, imqattgħa
  • 2 sinniet tewm, imqattgħin
  • 2 izkuk tal-karfus, imqattgħin
  • zunnarija kbira, imqaxxra u mqattgħa f’dadi
  • qargħa bagħlija, imqattgħa f’dadi
  • 600ml stokk tal-ħaxix
  • bott ta’ 400g polpa tat-tadam
  • ¼ ta’ kuċċarina frak tal-filfel niexef
  • ħwawar friski
  • 200g tortellini friski tal-ġobon
  • 2 mgħaref tursin imqatta’

 

Method

Saħħan iż-żejt taż-żebbuġa f’taġen fond u qalli l-basal u t-tewm fih għal 3 minuti. Żid il-karfus, iz-zunnarija u l-qargħa bagħlija u kompli sajjar għal 5 minuti oħra. Meta l-ħaxix jibda jirtab, itfa’ l-istokk tal-ħaxix u t-tadam. Żid il-frak tal-filfel u ħawwar bil-bżar u l-melħ. Għatti t-taġen, baxxi n-nar u ħalli s-soppa ttektek għal 15-il minuta oħra. Ftit qabel tkun se sserviha, xħin tkun għadha fuq in-nar, żid it-tortellini u kompli sajjar is-soppa għal 2-3 minuta oħra, sakemm it-tortellini jsiru. Itfa’ t-tursin imqatta’ u serviha fi platti kbar fondi.
