Couscous salad with spicy cashews, grilled scamorza, chicken and mango

Serves:

Ingredients

  • 1 packet tomato and onion couscous (Arkadia/Waitrose)
  • 200g cashew nuts (Lamb brand)
  • 2 tsp mixed ground cumin, ground cardamon, garlic powder and cayenne pepper
  • 1 grilled chicken breast
  • 1 scamorza cheese
  • 1 fresh mango
  • Fresh basil and coriander
  • Tomato chutney (Arcadia/Waitrose)
  • Rocket leaves
  • Olive oil
  • 2 tortillas

Method

Prepare couscous according to packet instructions. Pour a drop of olive oil in a frying pan, toast the cashews together with the spices. Mix the spiced cashew nuts in the couscous. Slice the cheese and grill. Cut the tortillas into wedges and bake or fry until crispy. Slice the grilled chicken and put in a bowl. Peel and chop the mango and add to the chicken together with the herbs. Bind with the chutney and a drizzle of olive oil. Mix in the last minute with the rocket leaves. Serve the cooled couscous accompanied with the marinated chicken, tortilla chips and grilled cheese.
